I got a chance to go to the famous Heart Attack Grill this past Thursday night, got a double and it was on, no need to ask if I finished it or not, that was a given.

Are those cherry/grape tomatoes?
They are.... and it's a particular brand that I really like called Flavor Bombs. They have that sweet, picked off the vine flavor that most store bought tomatoes don't have. In this recipe, you marinate them in olive oil, garlic, salt and pepper for a while before they're tossed into the pasta.

What makes this recipe amazing is the rendered down zucchini and garlic that creates the sauce. Between that, the tomatoes, and the fresh mint and chives.... this simple looking meal packs a flavor punch. And it's good left over as well.
 
This home food delivery stuff is sort of fun... except when they don't have what you want for the complete recipe lol...

I was able to get a nice pork butt and decided that carnitas would be a good route. Put it in the crockpot in the morning with spices, onion, jalapeno, garlic and orange juice.

Got some goodies ready to put on the carnitas... queso fresco, onion, tomato, cilantro, avacado.... a little lime to squeeze on them.

I didn't want to defrost the corn tortillas I have so I just used some flour tortillas I had in the fridge.... and I actually think I might like them better this way.

Staying at home means lots of cooking in. I've been mostly craving 'comfort food' since it's still cold out and.... well because lol.

The other night was a standard chicken breast dinner...nothing fancy to see here lol.

Final product... but the day after. The colors of the carrots aren't as vibrant since it sat in the 'gravy' all night. But still tastes damn good. If I may say so myself.:razz2:
