Shortbread is the Zen of cookies . It's simple but complex . The textures and flavors are co-dependent upon each other for the end result. Just a few ingredients are needed for a classic shortbread. For incredibly tasty shortbread buy some higher fat butter . Most American butters are 80% butterfat, European butters are 82 -85%, i use a Kerrygold Irish butter or really any higher fat butter. Try to find a local source for your flour as the taste is always better. Sugar is there to support not to overwhelm . Some folks like to use brown sugar, others swear by powder or icing sugar, and still some use plain white. Good shortbread is contingent on the ratio of all the ingredients , the right temperature of the dough, and the amount of mixing ( over mixing makes the cookie tough ). There are just too many shortbread variations, and recipes to count . They all have their certain nuances and people swear their shortbread is the best. Now here's the best shortbread recipe :rofl:.

MOM'S Shortbread
  1. 1 cup butter softened ( 225 grams )
  2. 1/2 cup powdered sugar (60 grams)
  3. 1 good pinch of Diamond Kosher salt or couple grams :lmao:
  4. 2 cups All purpose flour ( 260 grams )
Beat butter until light and fluffy about 3 minutes. Sift sugar, salt, and flour 4times very important to the texture. Add your dry sifted ingredients to the creamed butter a little at a time, using a spatula, or wooden spoon. Then I move it in between 2 parchment papers and roll out to a 9" x 9" square. I then cut and score the cookies with a knife and fork. I'll bake @300 degrees for 20 minutes rotating halfway through. They should be a very light golden color. :thumbsup:

Yesterday's celebration continued into the evening.... I made a Greek dinner for my daughter in law... it was her birthday.

First a couple of shots... and a bit of cheese.
