Raspberry shortbread swirls, This is one of my own recipes . Raspberries, and a splash of Grand mariner, and a vanilla shortbread . These look kinda rough but they taste amazing. I have been playing around with freeze dried fruits and they impart a very robust and fruity cookie. I can see a ton of things to do with freeze dried fruit that you can't with regular.

I really love scampi and yours look great. I don’t think I’ve seen scampi here though. I think they’re a different species than shrimp. So, it’s shrimp scampi for us. I found an awesome recipe on YouTube that uses shrimp stock and wow did it turn out great.

You might be referring to what we call langoustines or slipper tails. More common in EU, and Italy where it originates . Always save your shrimp shells .
