Herb encrusted rack of lamb with Greek salad and rice pilaf...

This was the recipe I followed for the lamb. And I've got to say it was pretty damn good.

I was only saying to Mom this morning how much I enjoyed a roast lamb shoulder with bakes potatoes, carrot, sweet potato & steamed broccoli with gravy & mint sauce. No pics but was the best feed I have had in weeks.

I made an amazing dish tonight... with a funny story behind it.

With this whole shelter in place thing going on, I've depended on Whole Foods delivery for my groceries. The other day, Halibut was on sale. So I ordered some with some mango salsa to go with. The problem lies in that once you have placed an order, you can't delete an item once it's been accepted. So the day of the delivery comes and they are out of Halibut. I end up with $7 of mango salsa... and no clue what to do with it.

Thanks to a good friend.... I was directed to this recipe for 'Loaded Naan Nachos With Ground Lamb and Crispy Chickpeas.' While labor intensive... it is worth it.

In retrospect, it probably would have been easier to just make the mango salsa according to the recipe (rather than using pre-prepared). I still had to chop things to add in.

Last night was barbecued ribs, along with zucchini casserole and rice....

I'll admit one thing; I cannot wait to get sick of going out to eat again lol... this cooking every single day is getting a bit old.

Weed infused butter. Slight chocolaty, coffee flavor. Paired really good with lots o dark chocolate and splash of Kahlua.
